Avocado League Blog Tour

When I was younger I absolutely hated the sight of just about anything that was good for me, but especially Avocados.  If my mother didn’t tell me it was chicken, I wouldn’t eat it!  She used to make this guacamole that was not appealing to an 8 year old.

It wasn’t until I became an adult and was pregnant with my twins that I all of a sudden got a craving for guacamole.  It can be quite expensive in the grocery store and I was going through a ton of it (don’t judge, I was eating for 2!)

Anyway, I started to experiment with different ways to use avocados and eventually, I came up with a very special recipe that is YUMMY.  Let me preface this by saying that this recipe would not be considered “healthful”, BUT, I’m able to get my kids to eat it, so its pretty good for every now and then. In general though, avocados have about 50 calories per ounce, they are packed with 20 different vitamins and minerals, and have zero sodium or cholesterol.  Sounds like a pretty healthy addition to any meal, huh?!

I’m sharing my recipe below, but first, a little about The Amazing Avocado Site.  The Avocado League has a great microsite that contains 8 recipe finalists, along with their recipes and profiles.  You will see that the recipes are suited towards the different parts of the Country from which they are submitted.  They look really fantastic, but, I’m from Charlotte so I have to give props to Christy for her ”Grilled Carolina Pimiento Cheese with Avocado & Bacon” recipe.  Check out all the recipes on their site and let me know which sound good to you OR if you have any great recipes using avocados, please pass them on!

Without future ado, here is mine:

Avocado and Tomato Cream Sauce:

Ingredients:

  • 2-3 ripe avocados
  • 4 oz package of cream cheese
  • 1/4 cup of heavy cream (or you can use milk)
  • 1 large, ripe, yummy tomato
  • 1 clove of Garlic
  • 1/4 cup diced onion
  • 2-3 Tablespoons of butter
  • Salt & pepper to taste

Directions:

  • Place avocados, garlic, onion, salt, pepper in food processor.  Chop only, do not liquify
  • Melt butter in saucepan, add cream and heat slowly until almost thickened
  • Remove from burner. Add cream cheese, and tomato
  • **For extra spice, add a couple of dashes of Carolina hot sauce

Pour sauce over just about anything, but we love it over fettucine with grilled chicken.  You will love this!
