Pulled Pork Fajita Recipe
I had a lot of pork left over from Sunday Pork Roast Dinner and was searching for other ways to use it instead of my usual of BBQ Sandwiches and using it in soup. I came across a Pulled Pork Fajita recipe and thought that sounded yummy! I always tweak recipes and add in my own stuff, so here is what I came up with. FYI - My husband said that this dinner is in his Top 5 Favorites now! Pretty good since I didn’t have a clue what we were having for dinner an hour before I prepared this!
This recipe will make about (6) Fajitas
Ingredients:
- 2-3 cups of shredded or chopped pork
- 1 small can or jar of diced green chilis
- 1 small onion
- Salt and pepper to taste
- 1 package Fajita mix
- Cheese to taste - about 2 cups total
- Fajita size flour tortillas
- Sour cream
- Salsa
Directions:
- Preheat oven to 350 degrees
- Slice or dice onion and saute until still a bit crunchy (a couple of minutes).
- Add the pork, chilis, fajita mix, salt and pepper to onions. Saute another 1-2 minutes
- Place about 2-3 Tablespoons of mixture in a line across a flour tortilla
- Top with cheese and roll up.
- Place rolled tortillas, flap side down in greased baking dish
- Top with cheese and cover
- Heat for about 20 minutes
- Top with Salsa and Sour Cream and you are done!
I served these with my Homemade Corn Tortillas and Salsa. What a yummy dinner!
